ABOUT Ulle gaarelu RECIPE

These are special and unique kind of vada made using a blend of lentils. Ulle gaarelu are made and served as breakfast during festivals like Sankranti , Diwali and New Moon days.

Ingredients Serving: 8

  1. 1/2 cup : Chana dal
  2. 1/2 cup : Moong dal
  3. 1/2 cup : Urad dal
  4. 1/2 cup : Rice flour
  5. 1 cup : wheat flour
  6. 8 no : Green chillies
  7. 1/2 cup : Chopped coriander
  8. 1 tbsp : Grated ginger
  9. Few curry leaves
  10. Water as needed
  11. Salt to taste
  12. Oil for frying

Instructions

  1. Dry grind the dals coarsely and add rice flour,mix them thoroughly . Next Add enough water and make a thick dough like batter .
  2. Now set this aside covered for at least 4 to 5 hours . **As we are using dals directly without soaking this step is a must to soften the dals
  3. Next make a fine paste of ginger and green chillies in a blender.
  4. Add this paste to the batter along with salt, chopped curry leaves, coriander leaves and wheat flour .
  5. Mix this well , add water if required but please keep in mind that the consistency of the batter should be thick, if the batter is runny you will not be able to shape them and fry. Now the batter is ready so for the frying process.
  6. Meanwhile start heating up the oil in a kadai or frying pan .
  7. Apply a little oil on to the ziplock bag and onto your fingers .
  8. next take a golf sized dough, place it on the greased ziplock .
  9. Pat it with fingers to form a poori shape and make a hole in the centre.
  10. Now lift it up carefully and drop in the hot oil.
  11. Be cautious and drop it along the edges of the pan. Do it slowly as we don't want a splash of hot oil. Please play safe Ladies !
  12. Fry until golden on both the sides.
  13. Drain them a paper towel to get rid of any excess oil.
  14. Ulle Garelu are all ready to serve as it is or can be had with green chutney , ketchup and also with Sabudana Kheer.
