ABOUT Mat Bean or Mataki Stir Fry RECIPE

It is commonly called mat bean, moth bean, matki, Turkish gram or dew bean. The pods, sprouts and protein rich seeds of this crop are commonly consumed in India. In Maharashtra it is popularly called as Mataki. Mataki chi usal or Misal is a famous Maharashtrian breakfast prepared in every household. Lots of recipes can be prepared using Moth or mat beans. Mataki Usal, Bhaji, Cutlet, Bhel, Rice etc. It is best consumed when sprouted. It is healthy and has unique taste.

Ingredients Serving: 4

  1. Mat Bean or Mataki sprouts - 1 1/2 cup
  2. Oil - 2 tbsp
  3. Red chilli Powder - 1/4 tsp
  4. Lemon juice – 1/4 tsp
  5. Chat Masala - 1/2 tsp
  6. salt to taste

Instructions

  1. Soak mat beans or Mataki overnight.
  2. Drain and rinse it. Tie in a clean muslin cloth. Keep aside for 4-5 hrs. or simply keep in the strainer. Sprinkle some water in between.
  3. In nonstick pan, heat oil. Add sprouted Mataki or Mat beans.
  4. Add salt. Mix well.
  5. Stir fry on medium low flame until cooked and crisp. Keep tossing in between. It will take 8-10 minutes. If required sprinkle some water.
  6. Add red chilli powder. Stir for few seconds.
  7. Remove in a plate. Add lemon juice.
  8. Sprinkle some chat masala and serve hot.
  9. Finely chopped onion and tomato can also be added.
