Almond and Cherry Pancake

Ingredients to make Almond and Cherry Pancake

  • butter- 1/2 cup
  • sugar- 3/4 cup
  • egg-1
  • flour- 1 cup
  • Almond meal (flour)- 2 tbsp
  • Baking powder- 1 tsp
  • Cherry infused water- 1/3 cup
  • milk- 1/2 cup
  • A pinch of salt
  • Condensed milk- 1 tbsp
  • Strawberry compote:
  • Strawberries- 1 cup
  • sugar- 3 tbsp
  • Orange juice- 1/4 cup

How to make Almond and Cherry Pancake

  1. For the pancake batter, beat the butter and sugar till its creamy and fluffy, then add in the egg and beat well. Then pour in milk and condensed milk, whisk them well together.
  2. In a bowl, mix the flour, almond meal, baking powder and salt, sift them and slowly add them into the mixture. Keep whisking, then add the cherry infused water to adjust the consistency but keep them thick so that you can make the desired shapes.
  3. Keep the batter aside for 10 minutes, meanwhile also prepare the compote for topping.
  4. Mix the strawberries, orange juice and sugar, then heat it well till the strawberries cook well and turn mushy. Cool them and grind in a mixer.
  5. Heat a griddle with some butter, slowly pour in the batter and spread it into a heart shape.You can use moulds too. Just put the mould in a griddle and pour the batter into it. Cook on both sides till it's crisp and remove.
  6. You can slice the pancake into a heart shape with a knife or cutter. Now decorate it with strawberry compote and caramel sauce.
  7. Serve instantly to enjoy!

My Tip:

For cherry infused water you can use the water in tinned cherries. For the caramel sauce, heat sugar till it caramelizes, then add in the butter cook till it melts. Remove from heat and add in cream. Mix it well.
