ABOUT Kothu Parotta - Kerala Style RECIPE

This is a simple, yet delicious Kerala breakfast where some shredded parathas are cooked along with eggs, chicken or veggies. It is also very popular in Tamil Nadu. it is relished as it is or with some coconut chutney.

Ingredients Serving: 3

  1. 2-3 parathas, shredded
  2. 2 tbsp. oil
  3. 1 tsp. mustard seeds
  4. 1/2 tsp. mustard seeds
  5. 1/4 tsp. asafoetida
  6. 2-3 green chilies
  7. 1-2 onion, chopped
  8. 1 tsp. garlic, chopped
  9. 1 sprig curry leaves
  10. 1 tomato, chopped
  11. salt to taste
  12. 1/2 tsp. turmeric powder
  13. 1 tbsp. red chili powder
  14. 1 tsp. coriander-cumin powder
  15. 1/2 tsp. pepper powder
  16. 1/2 tsp. garam masala powder
  17. 1 tsp. tomato paste
  18. 1-2 eggs
  19. 1/2 cup gravy / stock
  20. 1 tsp. lime juice
  21. 1-2 tbsp. coriander leaves & 1 fresh red chili, chopped to garnish

Instructions

  1. Heat oil in a pan and temper with mustard seeds, cumin seeds and asafoetida. Allow it to splutter. Add the onion, garlic, green chilies and curry leaves. Fry till light brown.
  2. Add the tomato and all the dry spices. Mix everything well and keep frying on a medium flame till it is mashed.
  3. Add the tomato paste and mix well. Then add the egg and fry well. Add the shredded parathas and combine everything.
  4. Keep on frying for 2-3 minutes. Midway add the gravy / stock and fry till dry. When done, add the lime juice and serve, garnished with coriander leaves.
