ABOUT Spring Rolls RECIPE

Yummy and a popular indo chinese, these delicious spring rolls are crunchy from outside, with a spiced vegetable filling from inside.

Ingredients Serving: 6

  1. For crepes -
  2. All Purpose Flour 1 cup
  3. Corn Flour 1/4th cup
  4. Salt
  5. Water as needed
  6. For stuffing -
  7. Oil 2 tbsp
  8. Salt to taste
  9. Vinegar 1 tbsp
  10. Soya sauce 1/4 tsp
  11. Worestshire sauce 1 tbsp
  12. Boiled Noodles 2 cup
  13. Onions 1
  14. Capsicum 1
  15. Carrot 1
  16. Cabbage 1/2
  17. Red chilly sauce 1 tbsp

Instructions

  1. FOR THE FILLING : HEAT 2 TBSP OIL
  2. ADD 1 TSP EACH OF GARLIC & GINGER, SAUTE TILL BROWN
  3. ADD 1/4 CUP ONION, 1 CAPSICUM
  4. ADD 1/4 CUP EACH OF CARROT, CABBAGE, SALT, 1/4 TSP PEPPER
  5. ADD 2 CUPS BOILED NOODLES, 1 TBSP VINEGAR
  6. ADD 1 TBSP WORCESTERSHIRE SAUCE, MIX, KEEP TO COOL
  7. FOR THE CREPES : MIX 1 CUP FLOUR, 1/4 CUP CORNFLOUR, SALT
  8. ADD 3/4 CUP WATER
  9. WIPE A NON STICK PAN WITH A KITCHEN TOWEL DIPPED IN OIL+ WATER SOLUTION
  10. SPREAD THE FLOUR BATTER
  11. COOK ON SLOW HEAT FOR 2-3 MINS, REMOVE GENTLY
  12. MAKE ALL CREPES IN THE SAME WAY, KEEP COVERED WITH A DAMP CLOTH
  13. PREPARE SPRING ROLLS: TAKE A CREPE, PUT SOME STUFFING IN THE CENTRE
  14. ROLL TIGHTLY TILL THE MIDDLE, BRUSH WITH FLOUR SLURRY ON THE EDGES
  15. TURN BOTH SIDES INWARDS, SEAL THE ENDS, ROLL
  16. PREPARE ALL THE ROLLS
  17. HEAT 4 TBSP OIL IN A NON STICK PAN
  18. SHALLOW FRY THE ROLLS
  19. FLIP THE ROLLS AFTER 2-3 MINS
  20. FRY TILL GOLDEN BROWN & CRISP, PLACE ON A TISSUE PAPER
