About Egg & Potato Salad Recipe

A hearty salad for all seasons. Fortifying enough on its own as lunch and yet works perfectly as a side. The addition of cranberries just kicks it up a notch

Egg & Potato Salad

Ingredients to make Egg & Potato Salad

  • 4 medium sized potatoes
  • 2 eggs
  • 6 salad Leaves/Lettuce
  • 2 tbsp Mayo
  • salt to season
  • 2 tbsp raisins/dried Cranberries to garnish

How to make Egg & Potato Salad

  1. Boil potatoes until tender. Peel and leave to cool and come down to room temperature.
  2. Hard boil eggs for 8-10 minutes. Rinse under cold water to stop further cooking of eggs.
  3. Add cold water and leave them to reach room temperature. Gently take the shell off.
  4. Take a salad bowl and arrange roughly teared salad leaves.
  5. Combine diced potatoes, egg pieces, mayonnaise, salt and pepper. Combine well.

My Tip:

Chilling is essential for this salad. There is nothing worse than warm stodgy potato salad.
