Ingredients Serving: 2

  1. For the baskets-
  2. Whole wheat flour 1/2 cup
  3. All purpose flour 1/4 cup
  4. Olive oil 1/8 cup
  5. Water as required at room temperature
  6. Salt 1/tsp
  7. For the Whipped cream-
  8. Chilled Whipping Cream 100 ml
  9. Icing sugar 4 tbsp
  10. For the Apple roses-
  11. Red apples 4
  12. Powdered sugar 4 tbsp
  13. Powdered Cinnamon 1/tbs
  14. For caramel glaze-
  15. Powdered sugar 1/2 cup
  16. Water 1/4 cup
  17. For assembling final baskets-
  18. Already Baked baskets
  19. Whipping cream as already prepared
  20. Chopped nuts as per choice
  21. Apple roses already prepared about 20
  22. Caramel glaze as already prepared
  23. Icing sugar as required

Instructions

  1. FOR BASKETS
  2. Seive or mix all dry ingredients. Add oil and prepare a dough with required water
  3. Preheat oven. Grease pie pan.
  4. Divide in 2 and roll the dough, place gently on a greased pan & press it towards the bottom and edges. This is for both the pie pans
  5. Fill it with something like beans, rice or Rajma.
  6. Bake for 20 minutes at 180° C.
  7. Bring the pie pan out of oven and carefully remove Rajma.
  8. Poke small holes in the bottom of the pie crust with a fork.
  9. Again bake for 10 minutes without weight until it turns golden brown.
  10. Let it cool completely before filling.
  11. FOR WHIPPING CREAM
  12. Whip the cream with electric beater
  13. Keep on adding icing sugar
  14. Beat until you get stiff peaks
  15. When ready, place in the fridge.
  16. FOR APPLE ROSES
  17. Slice unpealed apples thinly.
  18. Spread sugar cinnamon mixure on a non stick pan ( 1 tbsp for 1 Apple)
  19. When sugar starts to melt, arrange Apple slices on the pan.
  20. Cook for 1 minute from one side on low flame until they become limp.
  21. Transfer Apple slices in a plate with the caramelized side upwards.
  22. Repeat the same with all the apple slices
  23. Let them cool completely.
  24. For making roses, start with the smaller slice.
  25. Roll the slices until the rose reaches the requisite size.
  26. Make all the roses and place in a plate carefully.
  27. TIME TO ASSEMBLE ROSE BASKET
  28. Spread nuts in the baked basket
  29. Arrange the apple roses over the nuts across the basket. But reserve one rose for later use.
  30. Repeat the same with the second basket.
  31. Warm the baskets in preheated oven at 180°c for 3 to 5 minutes.
  32. In the meantime prepare the caramel glaze.
  33. FOR CARAMEL GLAZE
  34. Heat powdered sugar in a pan without water on low flame until sugar starts to melt & turn light brown.
  35. Add water and cook for 1minute.
  36. Bring the baskets out of oven and brush the roses with glaze when the baskets cool down.
  37. Pour in the whipped cream into the baskets from the center.
  38. Cover the center of the baskets with the reserved roses
  39. Also brush the middle rose with the glaze.
  40. Garnish with icing sugar if you like.
  41. Place them in the fridge and serve chilled.
