Fish Frittata in Carrot Cups

Ingredients to make Fish Frittata in Carrot Cups

  • Grated Carrots - 1 1/2 cups
  • cornflour - 1 tablespoon
  • Oil- 1 1/2 tablespoons+ 2 tablespoon
  • Salt - to taste
  • Crushed Pepper - To taste
  • Smashed Fish - 1 cup (Fish pieces boiled with salt, then deboned and smashed)
  • Chopped Veggies of choice - 1 cup (I used potato, cauliflower florets, carrots, tomatoes and beans)
  • Onion - 1 Big
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Kashmiri Mirch Powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam Masala powder - 1 teaspoon
  • Finely chopped green chillies - To taste
  • Eggs - 5
  • Milk- 1/4 cup (more if needed)
  • Boiled egg white -2 Egg whites (grated)
  • Chilli flakes- To taste
  • Tomato sauce/salsa - As needed

How to make Fish Frittata in Carrot Cups

  1. 1. Preheat the Air fryer at 180 degrees centigrade for 5 minutes. Grease 6 muffin cups. Meanwhile, squeeze the grated carrots to remove as much juice as possible.
  2. 2. Spread the squeezed carrots onto a plate, toss with cornflour, salt, pepper and 1 1/2 tablespoons of oil. Divide it into 6 portions.
  3. 3. Put a portion of carrot mixture in each cups. Press into the bottom and up the sides to give the shape of the muffin cups. It will shrink while baking the cup, so be generous while putting the carrot mixture.
  4. 4. Bake in the air fryer for 8 minutes at 180 degrees centigrade. Take out of the air fryer and keep aside till it cools down.
  5. 5. In the meantime, Prepare the filling. Heat 2 tablespoons oil in a nonstick pan. Add onion & Fry till translucent. Add ginger and garlic paste and fry for 1 minutes. Add all the veggies (except tomatoes) and salt to taste.
  6. 5. Cook cover on a low flame till veggies are almost done. Now add tomatoes, green chillies and fish (which is boiled, deboned, smashed and kept aside).
  7. 6. Add all the powder masala stir occasionally and cook till done.
  8. 7. Whisk the egg with milk, salt & pepper to taste. Mix it with the fish filling with a fork. Put 2 tablespoons of this mixture into each prepared carrot cup (The cups were placed in the mould).
  9. 7. Bake in the air fryer for 8 more minutes at 180 degrees centigrade.
  10. 8. Serve and Enjoy the frittata garnished with grated boiled egg whites; which is tossed with chilli flakes and tomato sauce/salsa on top of the egg white mixture.
My Tip: 1. Adding of grated Mozzarella cheese & oregano in the egg-fish filling will give an extra flavour and taste. 2. A squeeze of half lemon on the grated carrots will keep the color nice & Red. 3. You can use plain flour, instead of corn flour. 4. If you want to use an oven/ convection micro oven; the temperature would be same. Just timing of baking the cup will be 30-35 minutes and baking of the frittata will be 20-25 minutes.
