this is one of awesome breaakfast recipe in every bengali home.The awesomeness of this paratha is the layers.. which can be made very quickly as well as easily.As i think the women did not have much time among their all household works,so they created a quick fix layer-paratha

Ingredients Serving: 3

  1. all purpose flour 500 gms
  2. white oil 100 gms
  3. carom seeds 10 gms
  4. Potatoes 2 Medium size
  5. Cauliflower 1
  6. Peas 100 gms
  7. Salt
  8. sugar
  9. For tempering
  10. Mustard oil
  11. onions seed
  12. asafoetida 1/2 tspn
  13. Bay Leaves 1
  14. Cinnamon Stick 1
  15. dried red chilly 1/2
  16. 1 tspn all purpose flour

Instructions

  1. add 3 tblspn white oil,carom seeds,salt,sugar into the flour mix it
  2. knead it with lukewarm water, keep aside for 15 min
  3. in between cut the potatoes into small cubes,cut the cauliflower florets, wash thoroughly
  4. take all these into a aluminium bowl and boil the whole things along with peas
  5. adjust with salt & sugar throw 2/3 slited green chilly
  6. in a pan add mustard oil to hot add dried red chilly, onion seed,asafoetida,bay leaves,one cinnamon stick.
  7. fry till the the aroma comes out
  8. now add 1 tspn flour into 1/2 cuplukewarm water, mix and pour into the pan
  9. add this tadka on the top of the boiled sabji
  10. keep boiling for 3/4 min. bring down
  11. now make balls from the kneaded dough
  12. roll them into round chapati like shape. sprinkle some flour
  13. fold it into half sprinkle some flour again roll it to bigger
  14. then again fold it into triangular shape roll it to ur desire size
  15. roll it from the middle to the end/angle. it should not be thick at the middle
  16. now place it on the tawa,roast it from both sidee
  17. apply 1 tblspn oil on the side & on the top of the paratha
  18. fry in low flame from both sides
  19. serve hot paratha with sabji
