A regular breakfast made in Kerala and Tamilnadu is Aappam. Making Aappam with Palm Jagerry is one of the very old breakfast recipe, that has found place in the menu of star hotels nowadays.

Ingredients Serving: 4

  1. Raw rice 1 cup
  2. Parboiled Rice 1 cup
  3. Urad dal 2 table spoons
  4. Fenugreek seeds 1 tea spoon
  5. Fresh grated coconut 1 cup
  6. Palm jagerry Powder 1 full cup
  7. Oil for making Aappam
  8. Boiled rice 3 table spoons
  9. Coconut water 1 cup

Instructions

  1. Wash the rice and dal well, add fenu greek seeds and soak for 3 hours.
  2. Drain the water out, and grind to smooth fine and thick batter adding the coconut and boiled rice.
  3. Allow to ferment overnight.
  4. Add 50 ml of water to the powdered palm jagerry and boil it till the jagerry melts well.
  5. Filter the melted syrup and allow to cool down.
  6. Add the jagerry syrup and the coconut water to the batter and mix well. Bring it to pouring consistency.
  7. Heat a Appam pan and grease with oil. Pour two ladles and swirl around.Drizzle few drops of ghee.
  8. Cover with the lid and cook for 3 mins in medium flame and Serve hot.
