Ingredients Serving: 4

  1. Wheat flour 2 cup
  2. Semolina 1 tbsp
  3. Desi ghee 1 tbsp
  4. Bathua leaves1 bunch
  5. Salt to taste
  6. Green chili 4
  7. A pinch of heeng
  8. Dry mango powder 1 tbsp
  9. Red chili powder as per taste
  10. Garlic cloves 4
  11. Ginger 1 inch piece
  12. Cumin powder 1 tbsp
  13. Oil for frying

Instructions

  1. Remove the hard stem and select the fine leaves of bathua then wash them properly and boil with a glass of water.
  2. Now strain the excess water and blend into the smooth puree with salt, garlic cloves, ginger, green chili, red chili, dry mango powder, cumin powder and heeng.
  3. Now knead the soft dough with the bathua paste, semolina, wheat flour and ghee, cover with muslin cloth and rest it for 10 minutes.
  4. Divide the dough into small equal portion and roll the poori by using the rolling pin. Heat the oil and deep fry the poori both side until golden and crisp.
  5. Serve hot with aloo bhaji, pickle and salad.
