Ingredients to make Salted Caramel Thumbprint Cookies

  • 1 1/2 cups All-purpose flour
  • 1/2 cup sugar
  • 2/3 cup Unsalted butter, softened
  • 2 eggs yolks
  • 1 tsp Vanilla extract
  • For the filling:
  • 1/4 cup Unsalted butter
  • 1/3 cup Brown sugar
  • 2 tablespoons Whipping cream
  • Handful of roasted peanuts, finely chopped to garnish

How to make Salted Caramel Thumbprint Cookies

  1. Take a bowl and put in the butter, sugar, egg yolks and vanilla extract. Whisk these ingredients together. Then add in the flour slowly and mix it well. Cover it with a foil or cloth and refrigerate it for 1 hour.
  2. Preheat the oven to 190ºC.
  3. Make dough balls of 1-inch sizes and place them separately on the cookie sheets. Gently push the center of each cookie with your thumb while arranging them.
  4. Bake these cookies for 10 minutes or till the sides become brown in colour. Once cooked, let it cool completely.
  5. To make the filling, heat the brown sugar and butter together in a pan. Cook it on a medium flame while stirring constantly.
  6. Continue cooking while stirring for 1-2 minutes then remove it from the heat. Now put in the whipping cream and stir it well. Let this caramel mixture cool down for 10-15 mins.
  7. Add about 1/2 teaspoon of this caramel mixture into the center of each cookie. Let this caramel set properly.
  8. Sprinkle the chopped nuts on top and serve to enjoy!
