ABOUT Roasted Vermicelli with Fried Potatoes (Seyun Patata) RECIPE

Seyun Patata is a traditional Sindhi breakfast. Seyun means vermicelli and patata means potato. It is prominently prepared during weddings or festive occasions. This is a simple but sublime combination of sweet and savoury. While cooking the vermicelli utmost care should be taken to roast it to the right colour and cook it just enough. A mushy texture or overcooked soft sticky texture will ruin this dish.So be very cautious. Either the fine vermicelli or the upma vermicelli (thicker) can be used. But traditionally the fine vermicelli is used.

Ingredients Serving: 4

  1. FOR VERMICELLI
  2. Fine vermicelli 200 gm
  3. Ghee 2 tablespoon
  4. sugar 1 cup
  5. green cardamom powder 1 teaspoon
  6. Water 1 & 1/2 to 2 cups
  7. Salt a small pinch
  8. Finely chopped almonds and pistachios for garnishing 1 tablespoon
  9. FOR FRIED POTATOES:
  10. 3 medium sized potatoes peeled and diced
  11. Oil for frying
  12. Black Pepper powder 1/2 teaspoon
  13. Red chiili powder 1/2 teaspoon
  14. Salt to taste

Instructions

  1. Heat ghee in a heavy bottom.pan
  2. Roast vermicelli on medium flame . While roasting add the cardamom powder.
  3. Stir continuously till vermicelli is golden in colour
  4. Add water and stir gently on medium to low flame
  5. The water will get absorbed . Now add sugar and stir gently pan.
  6. Let vermicelli cook for 5 to 10 minutes on low flame.
  7. Garnish with dry fruits
  8. Deep fry potatoes till soft
  9. Drain potatoes and mix salt, pepper and chilli powder.
  10. Serve with vermicelli
