ABOUT Mutton nihari RECIPE

This is typical hyderabadi dish made with mutton and its bones, generally served with roti or naan.

Ingredients Serving: 2

  1. Kasuri methi 1 tsp
  2. Wheat flour 1 tbsp
  3. Dalchini [cinnamon] 1 tsp
  4. Haldi [turmeric powder] 1 tsp
  5. Ginger garlic paste 1 tbsp
  6. Salt according to taste
  7. Red chilli powder 1 tsp
  8. Dhaniya powder [coriander powder] 2 tsp
  9. Kali mirch [black peppercorns] 5-7
  10. Ghee 2 tbsp
  11. Onice slice 1 large
  12. Mutton masala 4 tbsp
  13. Bay leaf 1
  14. Geera [cumin seeds] 1 tsp
  15. Hari elaichi [green cardamom] 4-5
  16. Laung [cloves] 5
  17. Saunf [fennel seeds] 1 tsp
  18. Boiled mutton 400 grm

Instructions

  1. Heat 2 tbsp ghee in a cooler and saute onion slices till brown.
  2. Add ginger garlic paste,turmeric and coriander powder,and saute till fat separates .add the mutton and fry well.
  3. Roast all the ingredients (dalchini,Saunf,jeera,elaichi,kalimirch ) expect the powder mix together every thing and dry grind to a fine powder. Nihari masala is ready.
  4. Add the Nihari spices masala,add wheat flour mix well.
  5. Add 6 cups of water and cook on low flame till the mutton is tender.
  6. Mutton Nihari is ready.
