Ingredients to make Verrine ~ A blend of cream and chocolate

  • 1 1/2 cup of whipped cream
  • 2 tbsp of mascarpone cheese @ room temperature
  • 1 1/2 cup of crushed brownies/ chocolate cake
  • 6 tbsp of sweet wine
  • Transparent glasses for serving

How to make Verrine ~ A blend of cream and chocolate

  1. In a bowl, beat the mascarpone cheese and 2 tbsp of wine with a spatula to form a smooth paste.
  2. Fold in the whipped cream just enough to blend in with the mascarpone.
  3. Line the crushed brownies in the glass. Drop in 2 tbsp of wine to moisten the brownies.
  4. Add a layer of whipped cream and mascarpone mixture.
  5. Repeat another layer of crushed brownies and the layer of cream.
  6. Pop it into the refrigerator(preferably overnight).
  7. Garnish it with chocolate and serve it chilled.
  8. For the chocolate garnish, grate the chocolate. Do not touch the chocolate with your hand, else it would melt.
  9. Shave it with a sharp knife held with a kitchen towel.
  10. Place 2/3rd of shaved chocolate in the microwave for not more than 8 sec. Take it out and give it a mix with a spoon. If its not melted completely, place it again in the microwave for few seconds, just enough to melt it.
  11. Once done, add the rest of the chocolate shaving and mix it with a spoon. It would melt in it and leave a thick and sticky texture. Pipe it out of a piping bag or ziploc bag into desired shapes to decorate cakes, desserts etc.

My Tip:

You could substitute brownies with crushed chocolate cake/crackers/marie gold biscuits. Drop in the wine just enough to make the brownie layer moist. Too much of wine would make it bitter. You could substitute wine with simple sugar syrup, if you would want to replace wine. Also adjust the sweetness of the sugar syrup based on the sweetness of the base (brownie/crackers/digestive biscuits), so that it does not leave you with a dessert that is bland nor make you sugar high :).
