Ingredients to make Eggless chocolate coffee cupcakes

  • For the cupcakes :
  • 1.5 cups All Purpose Flour
  • 1 cup caster sugar
  • 1 tsp baking soda
  • 5 tbsp cocoa powder
  • 1/2 tsp Salt
  • 1 tsp coffee granules
  • 2 tsp vanilla
  • 1/2 cup oil
  • 1 cup hot water
  • 2 tbsp Vinegar
  • For the buttercream :
  • 1 cup Butter
  • 3 cups icing sugar
  • 1.5 tsp coffee dissolved in 1 tbsp warm water or milk
  • 1 tsp vanilla

How to make Eggless chocolate coffee cupcakes

  1. For the cupcakes :
  2. Preheat oven to 160°C.
  3. Combine all dry ingredients.
  4. Combine all wet ingredients.
  5. Mix the wet and dry ingredients with a spatula until combined, do not overmix.
  6. Line a muffin tray with paper liners or use direct baking cups and fill them wit the batter 2/3 full.
  7. Bake for 18-20 minutes until toothpick comes out clean.
  8. Cool completely before frosting. Will make 12 cupcakes.
  9. For the buttercream :
  10. Combine warm water, coffee and vanilla until coffee is dissolved.
  11. In a bowl beat the butter using hand mixer until light and fluffly for 5-6 minutes.
  12. Add the sugar one cup at a time and beat for 7-8 minutes until all is mixed and frosting is fluffy.
  13. Add the cooled coffee water mixture to this and beat for another 2 minutes.. this can frost upto 12 cupcakes .
  14. Use your favourite nozzle and a piping bag to frost cupcakes or just spoon them on top ! Decorate with heart sprinkles to make them colorful and apt for Valentine's day !
My Tip: can stay upto 4 days in the fridge.
