A variation to our traditional dosa. a fusion with mediterranean shakshouka.

Ingredients Serving: 2

  1. Dosa batter 1cup,
  2. eggs 2,
  3. white onion 1
  4. ripened tomato - 1
  5. capsicum any color half a piece
  6. olive oil
  7. pepper 1 tsp
  8. Paprika 1 tsp
  9. Cayenne pepper 1 tsp
  10. Salt.
  11. Sugar
  12. parsley leaves [handful]
  13. Tomato paste - 1/4 th cup
  14. cumin a pinch

Instructions

  1. Heat a pan with some oil. Add chopped onion and saute them until golden brown. Then add the chopped tomatoes. tomato paste and all the powdered masalas along with salt.
  2. Cook for few minutes and then add the chopped capsicum , cook until the masala is done. Remove and keep aside.
  3. Now heat a dosa tawa and grease it with very little oil. Then pour a ladle of the dosa batter and spread it. Then pour generous amount of the tomato masalas. poke small holes in the masala and break egg in each hole.
  4. Now let the entire thing cook, all little oil on all sides. Once the eggs are cooked, serve the dosa onto a plate.
