Ingredients Serving: 2

  1. Onion 1/2 finely chopped
  2. Ginger 1 inch finely chopped
  3. Green chilli 1 finely chopped
  4. Oil 2 tablespoons
  5. Fistful peanuts / groundnuts
  6. Mustard seeds 1 tablespoon
  7. Jeera / cumin 1/2 tablespoon
  8. Urad dal 1 tablespoon
  9. Dried 1 red chillies
  10. Curry leaves 1 tablespoon
  11. Coriander leaves 2 tablespoons finely chopped
  12. Turmeric / haldi 1/2 tablespoon
  13. 1 cup thick poha
  14. Salt 1 tablespoon

Instructions

  1. Firstly, roast onion, ginger and chilli without adding oil.
  2. Roast on low flame till all the moisture is reduced from onions.
  3. Remove in a plate and keep aside and now to the same kadai heat oil and roast peanuts and add in mustard seeds, jeera, urad dal, dried red chilli, hing and curry leaves.
  4. Saute till the tempering splutters.
  5. Furthermore, add in previously sauted onions, coriander leaves and turmeric.
  6. Saute for 2 minutes or till onions gets cooked well.
  7. Now add in thick poha and saute on low flame for 15 minutes.
  8. Allow the mixture to cool completely.
  9. Furthermore, add salt and mix well and transfer the poha into a glass jar or a ziplock bag.
  10. To prepare poha, add in hot water just above the level of poha in jar.
  11. Close the lid and allow to rest for 15 minutes.
  12. Finally, serve hot hot poha.
