The vintage Indian Coffee House brand was first started in the city of Kolkata before independence in the year 1876. Since then it has been an iconic eatery and a meeting place for folks in the city. They serve a variety of mouthwatering and cult breakfast and snack recipes out of which the Egg Sandwich accompanied by Doodh Cha(milk masala tea) is the most popular.

Ingredients Serving: 2

  1. For Egg Sandwich:
  2. 6 fresh slices of bread with edges discarded
  3. 2 hard boiled eggs
  4. Salt to taste
  5. 1tb freshly crushed black pepper
  6. 1 Tb butter at room temperature
  7. For Doodh Cha:(2 servings)
  8. 1 cup plain milk
  9. 1/2 cup water
  10. 2 green cardamom pods coarsely pounded
  11. 1 piece of clove
  12. 1/2 inch ginger deskined and slightly crushed
  13. Sugar to taste
  14. 2 Tb plain tea leaves

Instructions

  1. Egg Sandwich:
  2. Deshell the hard boiled eggs once cool and place them on a plate
  3. Chop them fine using a sharp knife
  4. Add salt to taste and fresh pepper crushed and mix
  5. Add butter and combine well and mash slightly using a fork or spoon
  6. place a generous amount of egg mix on one of the bread slices and cover it with another and slice the sandwich if desired.
  7. Finish the rest of the Sandwiches similarly
  8. Doodh Cha:
  9. Combine tea leaves, milk and water and bring on a boil in a saucepan over high heat
  10. Once boiled reduce heat and add sugar, ginger,cardamom and clove
  11. Stir once with a spoon and let the tea simmer on Low heat for 5-6 minutes
  12. Strain the tea after taking off heat and serve hot with egg sandwich
