Ingredients to make Rocky Green Chana Salad With Cranberry Dressing

  • For Dressing - Dried cranberries - ½ cup
  • Water - ½ cup
  • Salt - to taste
  • Chili flakes - ½ tsp
  • Olive oil - 2 tbsp
  • For Salad - Green chanas - 1 cup
  • Groundnut chikki - ½ cup (chopped)
  • Apple - ½ (slices)
  • Orange - ½ (deseeded & chopped)
  • Lettuce leaves - few
  • Almonds - 2 tbsp (slightly roasted)
  • Black olives - 2 tbsp (slices)
  • Dates - 4-5 (deseeded & chopped)
  • Dried mixed herbs - 1 tsp
  • Salted Nachos Chips - few (for garnish)

How to make Rocky Green Chana Salad With Cranberry Dressing

  1. For Dressing - Soak cranberries in water for sometime. Then grind to a smooth paste adding salt & chili flakes. Add olive oil and mix well.
  2. For Salad - In a bowl, mix all the ingredients except the lettuce leaf and keep aside for 30 minutes for the flavors to incorporate.
  3. Just before serving, add the lettuce leaves & cranberry dressing. Give a quick toss & serve immediately topped with nacho chips.

My Tip:

I like to chill the salad. So, I refrigerate it for the flavors to incorporate.
