A Beautiful South Indian Recipe that looks like a cake and is a Crispy version of Upma

Ingredients Serving: 4

  1. I. For the Cake
  2. Rava - 1.5 cup
  3. Thick Curd - 2/3 cup
  4. Bell peppers, Onions, Carrots, Peas diced - 1/2 cup
  5. Salt to taste
  6. 2 tsp oil
  7. Dry coconut powder or you can even use fresh desiccated: 2 tsp
  8. Water for consistency adjustments
  9. Eno - 1 pouch
  10. II. For Temper
  11. Mustard seeds - 1 tbsp
  12. Curry Leaves - 15 to 20
  13. Green Chilli - 1-2
  14. Oil - 2 tsp

Instructions

  1. In a dry Bowl, Mix Rawa, Curd, diced veggies and salt well.
  2. You may have to add little water to set the consistency similar to thick cake or dhokla, but not flowing consistency.
  3. Keep it aside for standing time.
  4. Take a nonstick Deep wok, add oil, mustard seeds, curry leaves and green chilli and let it spread on the entire base.
  5. While it's crackling, quickly mix eno with Veggie Rawa mix and spread it evenly over the wok with Temper.
  6. Cover the wok, cook on medium slow for 3-4min and then over slow flame for 5-6min.
  7. Just like cake, check with a toothpick or knife to check. It should come out clean.
  8. Slide it out from the wok. It should come out easily bcoz of non stick surface.
  9. Cut out in desired shapes.
  10. Serve with coconut, mint or tomato sauce.
