Mutton pay is a soup/stew made with lamb legs and is commonly had for breakfast during cold winter months.The history of paya dates back to mughals and was introduced in the indian cuisine by them.It is extremely healthy.

Ingredients Serving: 4

  1. Mutton legs-6
  2. Salt to taste
  3. ginger- 1 small piece
  4. Black pepper corns-5-6
  5. Water-3glasses
  6. Oil-2tblsp
  7. Sliced Onion-2
  8. Slit green chillies-2-3
  9. Green cardamom-2-3
  10. Cloves-2-3
  11. Turmeric powder-1/2tsp
  12. Ginger paste-1tbsp
  13. black pepper powder-1/2 tsp
  14. Chopped coriander leaves-2tblsp

Instructions

  1. For tenderizing:
  2. Firstly wash the pieces of lamb legs well for about 5-6times
  3. In a pressure cooker add the washed lamb legs,salt,black pepper corns,and ginger
  4. Add for about 3 glasses of water and pressure cook them on high flame for 5 minutes and then lower the flame and continue to cook for 30-35minutes.
  5. For making the soup:
  6. In a vessel add oil and heat it.add in cardamom and cloves.
  7. Add the sliced onions and fry them till translucent.add in the green chillies and turmeric powder.
  8. Now add in the ginger paste and saute for few minutes
  9. Transfer the tenderized legs and it's extract into it.
  10. Add little water if required.bring to boil.
  11. Add coriander and black pepper powder.
  12. Serve with naan puri or bread.
