ABOUT Red velvet cheesecake brownie bites RECIPE

You never have to choose between red velvet , cheesecake or brownies again. This pretty mini bites have all three in one ! Recipe is inspired from Just a Taste.

Ingredients Serving: 20

  1. 115 gram or 1/2 cup unsalted butter, melted
  2. 200 grams or 1 cup granulated sugar
  3. 20 grams or 1/4 cup unsweetened cocoa powder
  4. 1/2 teaspoon vanilla extract
  5. 1 tablespoon red food coloring
  6. Pinch of salt
  7. 1/2 teaspoon vinegar
  8. 2 eggs , at room temperature
  9. 90 grams or 3/4 cup all-purpose flour
  10. For the filling :220 grams or 1 cup cream cheese
  11. 45 grams or 3 Tablespoons granulated sugar
  12. 1/2 teaspoon vanilla extract
  13. 1 large egg yolk

Instructions

  1. Preheat your oven to 180 C/ 350 F. Grease and flour a mini muffin pan or mini muffin cups.
  2. To prepare your cheesecake filling , beat the cream cheese , yolk, sugar and vanilla in a medium mixing bowl until smooth . It should be as thick as a pancake batter. Don't overheat until too thin. Refrigerate until needed
  3. In another medium bowl , whisk together the melted butter, sugar , cocoa , vanilla , salt and red food colouring until well combined. Mix in the vinegar.
  4. Add and mix in the eggs ONE by ONE.
  5. Fold in the flour until you can't see flour anymore.
  6. Pour 1 tablespoon of the brownie batter into each mini muffin pan cavity / silicon cup . Add a teaspoon of the cheesecake filling .
  7. Swirl the cheesecake filling into the brownie batter using a toothpick. The cups should be about 3/4th full.
  8. Bake at 350 F / 180 C for 12-15 mins until the cheesecake part is fully set. Let cool in the pan / cups for 5 minutes before unmoulding.

@ Flours Frostings: There's no raising agent like baking powder/soda in the recipe! Is this intentional??
