Jive gaja or khaja is a tongue shape deep fried sweet dish...it's a Bengals traditional recipe..in any occasion or without occasion you can make this deep fried pastry to indulge your sweet tooth

Ingredients Serving: 10

  1. For the dough:
  2. Flour/Maida - 2 cup
  3. Oil - 3-4 tbsp
  4. Salt - 1 tsp
  5. For Sugar syrup
  6. Water - 2 cup
  7. Sugar - 2 cup

Instructions

  1. To make the Dough : Take a bowl ,add maida ,oil ,salt and mix it until gets a breadcrumb like texture then add water, knead a soft smooth dough and cover it for 20 mins. Take 3-4tbsp maida and 4-5 tbsp oil ,mix it well, make a thick paste.
  2. Take water and sugar ,bring to boil ,cook until it thicken into a one thread sugar syrup, keep it aside
  3. Now take small portion from dough ,make three equal size balls. Roll it like roti, make three rotis, place first roti and spread oil-maida paste on top
  4. Then place second roti, again spread oil-maida paste and place third roti over it , spread oil-maida paste.
  5. Fold roti bunches like a roll,cut it in equal portion. Roll each portion like a rectangular or tongue shape.
  6. Heat oil in karai for deep frying. Place rectangular shape khaja into the hot oil, oil should be on low medium heat.
  7. Fry it until gets golden colour, drain oil and place it into sugar syrup. Mix it well with sugar syrup.
  8. Take from sugar syrup. Place khaja on serving plate.(.don't keep khaja into sugar syrup for long time, 1min max). You can store khaja in a jar.
