ABOUT Kolkata Hakka Chowmein ( Non Veg) RECIPE

There's something about chow mein and Kolkata. Chow mein has lasted Long and has become an integral part of the city. It is made for breakfast at homes commonly and also a famous street food.There are various eateries in Tangra(Chinese settlement) or even outside which serves variety of version of Chowmein.

Ingredients Serving: 4

  1. Any thick rice noodles (2 pack)
  2. 1 medium capsicum
  3. 1 Onion
  4. 1 bunch green onion
  5. 8-10 French beans
  6. 1 Medium Carrot
  7. 1 small cabbage
  8. 3 eggs
  9. 5-8 Tb oil
  10. 100 gm prawns deshelled and cleaned
  11. Salt to taste
  12. 1 Tb black pepper powder
  13. 1 Tb light soy sauce
  14. 1 ts vinegar

Instructions

  1. Boil the noodles using sufficient water, 1 Tb oil only till it’s cooked. Don’t over boil
  2. Strain the noodles using a colander and keep aside
  3. Chop the veggies besides onion into fine pieces. Deskin and deseed where ever required.
  4. Slices onion into Long thin slices
  5. Add a ts salt to the prawns and coat them well and allow to marinate for 10-15 minutes
  6. Add 1 Tb oil in a non stick pan and sauté the vegetables over medium-Low heat for 5-7 minutes. To retain crunchiness, do not over cook
  7. Now add 1 ts oil to the pan if needed and pan fry the prawns till cooked(over frying can make them hard )
  8. Move the prawns on one side of the pan and add the eggs and scramble them well. Take off heat once done
  9. Now turn on the stove on medium heat and add 1 Tb oil and the onions in a wok and sauté till translucent
  10. Next add the noodles and coat them with oil and sauté for 2-3 minutes
  11. Add the veggies, eggs,prawns and green onions.mix well
  12. Season with salt, pepper
  13. Add soy sauce and vinegar and give it a good mix by tossing the noodles well
  14. Check the seasoning and adjust if required
  15. Turn off the heat and serve hot with spicy garlic sauce
  16. This noodles tastes great just by itself too!
