About Strawberry Galette Recipe

Buttery, flaky pastry with ripe juicy sweet strawberries. A rustic and super easy dessert !

Strawberry Galette

Ingredients to make Strawberry Galette

  • For the dough : 140 grams or 1 cup all purpose flour
  • 85 grams or 6 tbsp unsalted butter , cold
  • 2-3 tbsp ice cold water
  • 1 tsp granulated sugar
  • A pinch of salt
  • For the filling : 1 1/2 cups or 6-7 large strawberries
  • 2 tbsp granulated sugar
  • 1 tsp cornflour
  • 1/4 tsp vanilla essence or extract
  • For wash : egg or 2 tbsp milk

How to make Strawberry Galette

  1. Whisk together the flour, salt and sugar in a mixing bowl
  2. Add the cold butter, cut into 1 cm chunks. Using knife, food processor or pastry cutter, crumble the butter into the flour
  3. Add the ice water until dough just comes together. wrap in cling wrap and chill for half an hour.
  4. Preheat your oven to 200 c / 400 F.
  5. Slice the strawberries and add the sugar, corn flour and vanilla . Mix well.
  6. Roll out the dough on a floured surface to a round around 10 inches round and about 1/4 inch thick.
  7. Add the filling in the centre , atleast 2 inches from the edge. Fold the edges over , pleating if desired.
  8. Transfer galette to a parchment lined or greased baking sheet. Brush egg or milk on the dough .
  9. Bake in preheated oven at 200 c / 400 F for 35-45 minutes until pastry is golden brown .

My Tip:

Serve warm on the same day for best flavours.
