Ingredients Serving: 1

  1. Greated carrot 1/2 cup
  2. Greated coconut 2 Tablespoons
  3. 1 chopped Green chilli
  4. Salt to taste
  5. 2 teaspoon of Oil (ginger oil)
  6. 1/2 teaspoon of ghee
  7. 1/4 teaspoon of mustard seeds
  8. 1/4 teaspoon of cumin seeds
  9. 1/4 teaspoon of chana dal
  10. Few curry leaves

Instructions

  1. Heat 2 tbsp oil.
  2. Add 1/4 tsp cumin seeds, chana dal, mustard seeds and 1 chopped green chilli. Sauté well.
  3. Add 1/2 cup chopped onions.
  4. Add 12-14 curry leaves.
  5. Add 1 tsp each of peanuts and cashews.
  6. Add 1 cup grated carrots.
  7. Add salt and cook for 3-4 mins on low heat.
  8. Add 2 tbsp grated coconut and cook for 2-3 mins.
  9. Add 2 cups cooked rice. Mix well.
  10. Add 1 tsp ghee. Mix and serve.
