ABOUT Jowar (Great Millet) Dosa RECIPE

Great Millet or Sorghum is popularly known as jawari in Maharashtra, Goa. It is one of the Indian staple food and consumed in various forms like Bhakari, Dosa, ghavan etc. It is healthy, highly nutritious and contains high amount of protein; fiber; the B vitamins niacin, thiamin and vitamin B6; and several dietary minerals. Dosa is been prepared using jowar, rice, fenugreek seeds and urad dal. As I have not fermented it, used baking soda as a rising agent. These dosas are quick spongy and easy to prepare, tastes amazing with a spicy curry or tomato chutney.

Ingredients Serving: 4

  1. Jowar/Great Millet/Sorghum – 1cup
  2. Idli or dosa rice – 1 cup
  3. Urad dal or split black lentil – 1 cup
  4. Fenugreek seeds – ½ tbsp.
  5. Baking soda –1 tsp
  6. Water – 2cups for soaking + ½ cup to adjust consistency
  7. Oil – 3-4 tbsp.
  8. Salt as per taste

Instructions

  1. Soak Jowar or great Millet in water overnight or at least 12 hrs.
  2. Soak Split Black Lentils, fenugreek seeds together and rice separately in water overnight.
  3. Next day, drain and rinse it. First blend soaked rice into smooth batter. Pour little water if required.
  4. Blend urad dal or Split Black Lentils, fenugreek seeds separately into smooth batter using little water if required.
  5. Blend Jowar into smooth batter.
  6. Combine all batters in a large bowl. Add salt. Add water as required, adjust the consistency of the batter to ensure it is not very thick not very thin. Keep it little thick.
  7. Add baking soda. Mix gently. Keep aside for 5-10 minutes.
  8. In a nonstick pan drizzle oil. Spread all over with rubber spatula. Pour a ladle full batter evenly in a thin or thick round shape.
  9. Cover it with a plate for 8-10 seconds. Remove plate and flip it when the edges begin to rise from the pan. Cook it from other side too. Drizzle some oil.
  10. Serve hot with Tomato chutney.
