ABOUT Atte ka halwa RECIPE

While sautéing, keep a lookout for when the ghee separates and the atta becomes lighter, as this is the perfect indication that your atta is well cooked.

Ingredients Serving: 2

  1. 1 cup atta (whole wheat flour)
  2. ½ cup ghee (clarified butter)
  3. 1 cup sugar or as required
  4. 2 cups water
  5. 1 tablespoon whole cashews (kaju) - optional

Instructions

  1. Add 2 cups water in a pan. Add 1 cup sugar.
  2. Let it come to a boil.
  3. Add ½ cup ghee in another pan.
  4. Add 1 tbsp cashews (kaju) to this. 
  5. Fry cashews till golden. Remove cashews onto a kitchen towel.
  6. in the same kadai (or pan), add 1 cup whole wheat flour (atta). Stir and mix well.
  7. Roast the whole wheat flour on a medium-low flame, stirring continuously till the color of the flour changes.
  8. When the whole wheat flour turns golden, gives a nutty fragrance and starts to release ghee, add hot sugar and water solution to the atta mixture. Be careful as the mixture may splutter.
  9. Continue stirring to ensure that no lumps are formed.
  10. Add the fried cashews.
  11. Stir continuously. The halwa will absorb the water and thicken.
  12. Serve the halwa warm or cold.
