Ingredients Serving: 6

  1. For the tart cases : Flour - 1.25 cups
  2. Butter- 1/2 cup
  3. Ice water- 3 tbsp
  4. For the white sauce: Butter - 1 tbsp
  5. Flour - 2 tbsp
  6. Milk- 1/2 cup
  7. Salt and pepper to taste
  8. Filling: Chicken - 1/2 cup
  9. Chopped onion - 1
  10. Chopped garlic , ginger and green chillies - 2 tsp
  11. Oregano/ Basil /Cayenne pepper- a pinch
  12. Refined oil - as required
  13. Grated Cheese- as required

Instructions

  1. 1. In a food processor or mixer, add the cold butter (the butter must be cold and cut into cubes), flour and pulsate two or three times.
  2. 2. Add the ice water and pulsate or blend till everything is mixed. Pour the dough into a bowl and mix it, cover it and keep it refrigerated for 30 minutes.
  3. 3. To make the filling, heat some oil in a pan, add chopped garlic, ginger and green chillies. Saute and add the onions. Saute till transparent and then add the chicken pieces.
  4. 4. Add salt and the spices and oil till done.
  5. 5. To make the white sauce, heat some butter in a pan, add the flour and cook till it looses the rawness. Add the milk, salt and pepper and cook till it boils and there are no lumps. Add the grated cheese to it. (I used cheddar cheese)
  6. 6. Now roll out the cold dough, cut circles using a cutter and place them in the muffin trays.
  7. 7. Mix the cooked chicken to the white sauce mixture and scoop some of it into each cup in the muffin tray.
  8. 8. Now cut smaller circles of the rolled out dough, place them on the filled cups and pinch the edges to seal it. Score the top with knife.
  9. 9. Bake them in a preheated oven at 190℃ for 30 minutes or till golden brown.
