Ingredients Serving: 2

  1. Suji 1 cup
  2. Salt as per taste
  3. Mustard seeds -1/4 tea spoon
  4. Chopped tomatoes -1/4 cup
  5. Grated carrot- 1/4 cup
  6. Chopped Green chillies -1
  7. Dry red chilli-1
  8. Sour Butter milk-1/2 cup
  9. Chopped green coriander-1/4 cup
  10. Boiled potato-2 medium size
  11. Oil-1/4 cup
  12. Turmeric powder-1/4 tea spoon
  13. Dhania powder-1 tea spoon
  14. Chat masala-1/2 tea spoon
  15. Amchoor powder -1/2 tea spoon
  16. Leaves of meetha neem-3-4
  17. Hing- a pinch
  18. Jeera-1/4 tea spoon
  19. Eno- 1/2 tea spoon
  20. Red chilli powder - as per taste

Instructions

  1. Take suji in bowl. add salt chilli powder. Gradually add butter milk and stir. If needed add water and make batter.
  2. Keep this batter aside for 30 minutes
  3. In the meantime we cook potato vegetable.
  4. Take half of the described oil in kadai or pan .
  5. When oil get heated add hing and jeera
  6. When jeera's colour changes add chopped boiled potatoes.
  7. Add all masala and mix well
  8. Now mess this potato vegetable and keep for cooling at room temperature.
  9. Our stuffing is ready for idli.
  10. After 30 minutes stir the batter .
  11. Add chopped veggies and mix it well.
  12. If needed add water.
  13. Now take residue oil in pan.
  14. Heat it. Add mustard seeds
  15. When mustard seeds stop cracking then add meetha neem leaves and dry chilli.
  16. When mitthi neem and dry chilli colour changes, turn off gas
  17. Add this to idli batter and mix well.
  18. Now take idli moulds . Grease it.
  19. Add eno to ready batter.
  20. Now pour 1 table spoon of batter then 1 tea spoon potato vegetable stuffing and then 1 table spoon batter
  21. In the same way fill all idli moulds.
  22. Now steam idli moulds for 10 minutes or can microwave for 5 minutes.
  23. Check with knife
  24. If needed then steam for few minutes.
  25. Idlies are ready. Serve it with desired chutney.
