Brinjal sabzi with soya granules

Ingredients Serving: 4

  1. Brinjals small; 5-6
  2. For masala :
  3. Nutrela Soya Granules – 1 cup
  4. Cloves – 4
  5. Grated coconut – 6 tbsp
  6. Groundnut – 1 tbsp
  7. Coriander seeds – 2 tsp
  8. Cumin seeds – 1 tsp
  9. Cinnamon stick – one piece
  10. Dried red chillies – 2-3
  11. Sesame seeds – 1 tsp
  12. Tamarind – 1/2 tsp
  13. Jaggery – Small in size
  14. Salt and hinge to taste

Instructions

  1. Take ground nuts in a frying pan and heat it for less than 2 mins.
  2. Add cloves, cinnamon stick, cumin , coriander, sesame and red chilli to the pan.
  3. Grind the roasted ingredients with Nutrela Soya Granules, jaggery, tamarind, coconut . Add salt to taste.
  4. Use 40-50 ml water which will help in making a paste of the ingredients.
  5. Make 2 slits of all brinjals. Slit it enough so that Stuffing can be done. Stuff paste in the brinjal through the slits
  6. Heat Oil in a pan. Add hinge , mustard seeds , curry leaves. Sauté in pan. Add Onions with salt.
  7. Now put the stuffed brinjals in frying pan and cook for 5-6 mins.
  8. Keep turning around the brinjal so that all sides are evenly exposed to the heat of frying pan.
  9. When they are fried evenly, add the paste in the pan with 180 ml water.
  10. Simmer and cook the dish till the curry reaches a good consistency and the brinjals are cooked.
