Ingredients Serving: 4

  1. Sliced lady finger. 1/2 kg
  2. Chopped onions 1 Big
  3. Onion cubes 1 large
  4. Jeera 1Tsp
  5. Kalonji. 1Tsp
  6. Haldi powder 1/2Tsp
  7. Ginger/garlic paste. 1Tbsp
  8. Red chilli powder. 1tsp
  9. Coriander powder 1 1/2Tsp
  10. Dry mango powder. 1/2Tsp
  11. Garam masala 1Tsp
  12. Thick curd. 1/2cup
  13. Oil. 4Tbsp
  14. Salt to taste

Instructions

  1. ARRANGE ALL THE INGREDIENTS FOR PREPARING BHINDI DO PYAAZA.
  2. HEAT 2TBSP OIL IN A PAN ADD IN BHINDI AND SAUTE.
  3. SAUTE FOR 4-5MINUTES.
  4. REMOVE AND KEEP ASIDE.
  5. IN SAME PAN HEAT 2TBSP OIL ADD JEERA AND KALONJI.
  6. ADD CHOPPED ONIONS AND SAUTE WELL.
  7. COVER AND COOK UNTIL ONIONS TURN TRANSLUCENT IN COLOR.
  8. ADD GINGER GARLIC PASTE AND SAUTE FOR 1MINUTE.
  9. ADD CHOPPED TOMATOES AND SAUTE.
  10. ADD SALT AND STIR WELL.
  11. ADD HALDI, RED CHILLI,CORIANDER,AMCHUR POWDER AND ONION CUBES.
  12. MIX ONION CUBES WELL WITH MASALA.
  13. COVER AND COOK FOR 2-3 MINUTES.
  14. ADD SAUTED BHINDI AND MIX WELL.
  15. ADD IN YOGURT, GARAM MASALA AND MIX WELL.
  16. COVER AND COOK FOR 5 MINUTES.
  17. GARNISH WITH CHOPPED CORIANDER LEAVES.
  18. BHINDI DO PYAAZA IS READY TO SERVE.
