Instant khaman cupcake

Ingredients to make Instant khaman cupcake

  • For the tempering-
  • Grated coconut
  • 1/2 cup or little more water
  • 2 tbsp sugar
  • Pinch of hing
  • 1 tsp mustard seeds
  • 4 Green chilli slit and cut into halves
  • 8- 10 curry leaves
  • For the batter-
  • oil 1tsp for greasing
  • water 1/2 cup
  • 1 1/2 tsp lemon juice
  • salt according to taste
  • 1/2 cup curd
  • 1tsp Eno fruit salt
  • besan 1cup
  • Chopped coriander

How to make Instant khaman cupcake

  1. Mix all ingredients mention in batter except oil. Grease plate or tin.I used cupcake moulds for this. Pour batter in moulds. Take 2 or 3 cups water in steamer/kadai/cooker at bottom and heat over medium flame. Make sure that steamer is hot before placing the plates/ moulds(filled with batter) in it. Steam till a knife or toothpick comes out clean. Cool down and demould.
  2. For tempering- Heat oil then add mustard seeds and hing. Add green chillies, curry leaves, water and sugar. Let boil then pour it on your demolded khaman cupcake.. Garnish with grated coconut and freshly chopped coriander leaves.
