Ingredients to make Shahi Tukda

  • For the Crisp Bread :
  • 6 slices of white bread
  • oil for frying
  • For Rabri :
  • 2.5 ltrs of full fat milk
  • sugar / sugarfree/s tevia
  • kesar a few strands
  • 1 tsp elaichi powder
  • Dry Fruit (finely sliced) for garnishing
  • Martini glasses or bowls of your choice for serving

How to make Shahi Tukda

  1. For Crisp Bread roundels: Cut the bread slices into small roundels or the shape of your choice and deep fry in oil till golden brown and crisp.Drain it on a kitchen towel
  2. For Rabri : Dissolve some strands of kesar in 4-5 tsp of lukewarm milk and keep aside
  3. Boil the milk in a heavy bottomed pan and keep stirring so that the milk doesn't burn and stick to the bottom of the pan When the milk thickens and reach the desired consistency add elaichi powder and 1 cup sugar (sweetness )
  4. Add dissolved kesar and mix. Let the Rabri cool down a little bit
  5. Serving : In the martini glasses or the bowls put a spoonful of rabri. Arrange fried bread roundels Repeat with a layer of rabri and again put fried bread pieces . Keep on repeating the procedure til you fill up 3/4th of the glass.
  6. Decorate with dryfruits and keep in the refrigerator to chill
  7. Served and relished chilled !!
