Ingredients Serving: 4

  1. 1.5 cups Chickpeas
  2. 1 slit Green Chilly
  3. 1 tsp Coriander Powder
  4. 1/4 tsp Red Chilly Powder
  5. 1/2 tsp Turmeric Powder
  6. 1 tsp Garam Masala or Chola Masala
  7. 1 tsp Dry Mango Powder
  8. A pinch of Asafoetida
  9. Black salt or Rock Salt to taste
  10. 2 cups Water
  11. Whole garam masala spices: 1 tsp cumin seeds/jeera 1 large Indian bay leaf/tej patta 2 inch cinnamon/dal chini 2-3 cloves/lavang 2 green cardamom/choti elachi 2-3 black peppercorn
  12. Ground Paste ingredients: 1 medium size onion chopped 2 medium size tomatoes chopped ½ inch ginger/adrak chopped 3-4 garlic cloves/lahsun chopped 1 green chili chopped
  13. For the Bhatura: 1 cup Flour 1/2 cup Curd 1 tsp Baking Powder 1/2 tsp Salt 2 tsp Oil

Instructions

  1. Soak chickpeas overnight.
  2. Drain the excess water and cook with water and salt in pressure cooker till 18-20 whistles.
  3. Drain the water and keep chole aside.
  4. Heat oil in the pan, Add onions , cook till golden brown. Then add tomatoes,ginger, garlic and green chillies. Cook till onion leaves the side.
  5. Again heat oil in a pan, add cumin seeds. When cumin seeds starts popping, add bay leaf,cinnamon, cloves, cardamom and pepercorns. Saute them till brown
  6. Heat oil in the pan , Add the paste and mixture in the pan and cook till oil leaves the sides. Stir continuously.
  7. Add turmeric,chilli, dry mango, coriander and cumin powder. Stir for a minute.
  8. Add chhole, salt and water. Cook at medium flame till gravy thickens.
  9. Add green chillies and cook for another 2 mins.
  10. Mix flour, curd, baking powder, oil and salt. Knead it into a firm dough.
  11. Cover the dough with a moist cloth. And keep it aside for 20 mins.
  12. Make medium size balls from dough. Roll out into a circle shape.
  13. Heat oil in the pan and deep fry the bhaturas till golden brown from both sides.
