Ingredients to make Simple Banana Bread

  • 1 1/8 cup all purpose flour (maida)
  • 2 over-ripe bananas, mashed
  • 1/2 cup normal/castor/brown sugar
  • 2-3 tbsp thick yoghurt/dahi
  • 2 eggs at room temperature
  • 1/4 cup softened butter/oil
  • 1/2 tsp baking soda
  • 1 tsp Baking powder
  • 1 tsp vanilla essence
  • 1/2 tsp Cinnamon powder
  • 1/4 cup warm milk
  • 1 tsp vinegar
  • a pinch of salt, if using unsalted butter/oil

How to make Simple Banana Bread

  1. Preheat the oven at 180 degrees Celsius for 10 mins. Cream the butter & sugar for 5-6 mins till pale & fluffy.
  2. Add eggs one by one, beating well after each addition. Beat the mixture till it looks fluffy & custard-like.
  3. Add yoghurt and vanilla essence to the eggs mixture. Beat well.
  4. Add mashed bananas & whisk well with light hands.
  5. Sieve all-purpose flour, baking powder, baking soda & cinnamon for 3-4 times.
  6. Add the sieved dry mixture in wet ingredients & fold it in using cut & fold method with light hands.
  7. Add milk & vinegar & whisk once again. Mix only till just combined & no lumps remain.
  8. Pour the cake batter in a greased and flour dusted loaf/cake pan. Bake in the preheated oven at 180 degrees Celsius for about 45-50 mins till skewer comes out clean & the cake top is springy to touch.
  9. Let it cool and enjoy!
My Tip: You can use buttermilk also instead of milk & vinegar. Using butter in this cake yields more sponginess.
