ABOUT Simple Banana Bread RECIPE

Simple banana bread with a hint of cinnamon is your answer to the lying over-ripe bananas in your pantry. This perfectly sweetened banana bread with a mild aroma of cinnamon is perfect to woo your husband. I tried a lot of different recipes from different blogs on Pinterest. Finally, I formulated this fool-proof recipe for Banana bread. I have tried this recipe about 3 times now, and every time it comes out super yummy, super moist and spongy.

Ingredients Serving: 5

  1. 1 1/8 cup all purpose flour (maida)
  2. 2 over-ripe bananas, mashed
  3. 1/2 cup normal/castor/brown sugar
  4. 2-3 tbsp thick yoghurt/dahi
  5. 2 eggs at room temperature
  6. 1/4 cup softened butter/oil
  7. 1/2 tsp baking soda
  8. 1 tsp Baking powder
  9. 1 tsp vanilla essence
  10. 1/2 tsp Cinnamon powder
  11. 1/4 cup warm milk
  12. 1 tsp vinegar
  13. a pinch of salt, if using unsalted butter/oil

Instructions

  1. Preheat the oven at 180 degrees Celsius for 10 mins. Cream the butter & sugar for 5-6 mins till pale & fluffy.
  2. Add eggs one by one, beating well after each addition. Beat the mixture till it looks fluffy & custard-like.
  3. Add yoghurt and vanilla essence to the eggs mixture. Beat well.
  4. Add mashed bananas & whisk well with light hands.
  5. Sieve all-purpose flour, baking powder, baking soda & cinnamon for 3-4 times.
  6. Add the sieved dry mixture in wet ingredients & fold it in using cut & fold method with light hands.
  7. Add milk & vinegar & whisk once again. Mix only till just combined & no lumps remain.
  8. Pour the cake batter in a greased and flour dusted loaf/cake pan. Bake in the preheated oven at 180 degrees Celsius for about 45-50 mins till skewer comes out clean & the cake top is springy to touch.
  9. Let it cool and enjoy!
