Simple banana bread with a hint of cinnamon is your answer to the lying over-ripe bananas in your pantry. This perfectly sweetened banana bread with a mild aroma of cinnamon is perfect to woo your husband. I tried a lot of different recipes from different blogs on Pinterest. Finally, I formulated this fool-proof recipe for Banana bread. I have tried this recipe about 3 times now, and every time it comes out super yummy, super moist and spongy.
Preheat the oven at 180 degrees Celsius for 10 mins. Cream the butter & sugar for 5-6 mins till pale & fluffy.
Add eggs one by one, beating well after each addition. Beat the mixture till it looks fluffy & custard-like.
Add yoghurt and vanilla essence to the eggs mixture. Beat well.
Add mashed bananas & whisk well with light hands.
Sieve all-purpose flour, baking powder, baking soda & cinnamon for 3-4 times.
Add the sieved dry mixture in wet ingredients & fold it in using cut & fold method with light hands.
Add milk & vinegar & whisk once again. Mix only till just combined & no lumps remain.
Pour the cake batter in a greased and flour dusted loaf/cake pan. Bake in the preheated oven at 180 degrees Celsius for about 45-50 mins till skewer comes out clean & the cake top is springy to touch.
Let it cool and enjoy!
