ABOUT Vegetable soya khichdi RECIPE

One of my kids favourite meals, packed with loads of veggies, a light and nourishing meal for everyone.

Ingredients Serving: 3

  1. 1 cup rice
  2. 1/4 cup Moong dal
  3. 1/2 cup soya chunks
  4. 1 medium potato
  5. 1 Big Carrot
  6. 10-15 French beans
  7. 1/2 cup capsicum ( green, red , yellow)
  8. 1/4 cup cauliflower
  9. 1 bay leaf
  10. 1 tsp cumin seeds
  11. 1/2 tsp turmeric powder
  12. 1/2 tsp red chilli powder
  13. Salt, to taste
  14. 2 tbsp ghee

Instructions

  1. Soak the rice and dal together and keep aside.
  2. Soak the soya chunks in warm water and keep aside.
  3. Chop all the vegetables into small pieces.
  4. in a pressure cooker put ghee and add bay leaf and cumin seeds.
  5. After the seeds crackle, add all the vegetables and stir for 1-2 mins.
  6. Squeeze the soya chunks and add to the vegetables.
  7. Stir for 2-3 mins and add rice.
  8. Add salt, turmeric powder and red chilli powder and sauté for 1-2 mins.
  9. Add required amount of water and close the cooker.
  10. Cook till 2-3 whistles and then switch off the gas.
  11. Let the heat go off then open the cooker.
  12. Serve hot with raita or curd.
