ABOUT Coriander Tomato Shorba RECIPE

Chorba or shorba (Hindi) is a kind of soup or stew found in national cuisines across the globe. Chorba is derived from the Persian term shor (salty) and Ba (stew). It is healthy and wholesome food which is consumed all over the world. It is prepared is various ways and using variety of ingredients. In India Sorba is also called as stew or soup. Tomato shorba or soup, paya soup, Yakhni (yoghurt and saffron based stew made with mutton)these are some of the popular soups or shorbas prepared in India.

Ingredients Serving: 4

  1. Tomatoes – 5 medium
  2. Coriander leaves with stems – 1/2 cup (tightly packed. Roughly chopped)
  3. Finely chopped Onion – 1 medium
  4. Finely chopped Garlic cloves – 3
  5. black peppercorns – 3/4 tsp
  6. Red chillies - 2 medium hot
  7. Coriander seeds – 1/2 tbsp
  8. Cumin Seeds – 1 tsp
  9. Bay leaf - 1
  10. Salt to taste
  11. Butter – 1 tbsp
  12. Water - 2 cups to adjust consistency
  13. For serving – Bread Croutons or toast.

Instructions

  1. In a presser cooker heat butter. Add cumin seeds, bay leaf, coriander seeds, black paper corns, broken red chillies. Stir for few seconds.
  2. Add finely chopped onion. Cook till translucent.
  3. Add garlic and cook till raw aroma goes away.
  4. Add tomatoes, coriander leaves, salt. Mix well.
  5. Add 2 cups water and close the cooker lid. Cook for 3 whistles.
  6. Switch off the flame. Let pressure inside cooker come down naturally.
  7. Let it cook and remove bay leaf.
  8. Once cooled, blend mixture into fine and thin puree. Pass this soup through soup sieve.
  9. Discard the residue. Reheat the mixture in sauce pan adding water to adjust the desired consistency. It should be slightly thin.
  10. Garnish with coriander leaves and bread croutons.
  11. Serve hot.
