ABOUT Salsa Mexicana in Cucumber Rolls RECIPE

Salsa is the Spanish, Italian, Greek, and Turkish term for sauce. In English-speaking countries, salsa usually refers to the sauces typical of Mexican cuisine known as hot salsas or salsas picantes, particularly those used as dips. Salsa is often tomato-based, a heterogeneous mixture that includes ingredients such as onions, chilies, beans, corn, and various spices. It is typically piquant, ranging from "mild" to "extremely hot". In India it is called as salad or koshimbir or Kachumber. It is best served with dal rice or with any starter or as a starter.

Ingredients Serving: 6

  1. Cucumbers – 2nos
  2. For Salsa - Cucumber – 1no medium (finely Chopped)
  3. Tomato – 2nos (finely Chopped)
  4. Beet root – ½ medium (finely Chopped)
  5. Onion – ½ medium (finely Chopped)
  6. Cilantro or Coriander leaves – 2 tbsp. (finely chopped)
  7. Jalapeno chilli or green chilli– 1no (finely chopped)
  8. Lemon juice -2-3 tbsp.
  9. Castor Sugar – ½ tsp
  10. Salt to taste
  11. For garnishing - shredded cabbage, sliced tomatoes, beetroot, cucumber lemon, chopped coriander leaves

Instructions

  1. In a bowl mix chopped tomatoes, cucumber, beet root, onion, cilantro, chilli, lemon juice. Add salt and sugar. Mix well and keep aside.
  2. Wash and pat dry the cucumbers. Use a mandolin to cut thin slices all the way through.
  3. Keep slicing the sides until you reach the full centre. Be careful that they don’t break. (Thin pieces could be saved for a salad or eaten up)
  4. Lay out each cucumber slice. Start to roll on one side until you reach the end.
  5. Keep in a plate. With the help of small spoon add mixture in each roll. Secure with a toothpick. (Optional). Repeat with remaining strips.
  6. Garnish it with chopped coriander and tomato, cucumber, beetroot slices and serve.
  7. If not serving immediately, chill until ready to serve. Also add salt and sugar later at the time of serving.
