ABOUT Honey Marshmallows RECIPE

I made HONEY MARSHMALLOW for the kids. I finally managed to get my hands on it. Made with honey, without corn syrup or liquid glucose. A healthier option of marshmallows. Soft, spongy and yummy too. My little ones just loved it.

Ingredients Serving: 5

  1. Water, divided into 2 cups
  2. Powdered Gelatin 3 tablespoons
  3. Light colored honey 1 cup
  4. Vanilla extract 1 tsp
  5. Salt 1/4 tsp
  6. Icing sugar and cornflour (to coat the outside of the marshmallows)

Instructions

  1. Grease a square dish and line it with butter paper (parchment paper) leaving about half an inch outside the dish to use it as handles.
  2. Dust the butter paper with a mix of icing sugar and cornflour (for very sweet you can use only icing sugar) so that the marshmallows do not stick to the bottom.
  3. In the stand or hand mixer bowl. Add gelatine with 1/2 cup of water.
  4. While the gelatine is softening, pour the other 1/2 cup of water in the saucepan along with honey, vanilla and salt.
  5. Turn the burner to medium heat, bringing the mixture to a boil. Continue to boil this mixture till it reaches soft ball stage (a stage where the mixture dropped in cold water forms a ball). This entire process should take around 7 to 8 minutes.
  6. Immediately remove the contents from the saucepan away from the heat.
  7. Turn your mixer on to low/ medium speed. Slowly pour the honey mixture into the bowl combining it with the softened gelatine. Turn the mixer to high and continue beating till the mixture becomes thick and fluffy like marshmallow cream.
  8. Turn off the mixer and pour this creamy mixture onto the parchment paper.
  9. Smoothen the top with a flat spatula. Dust the top with icing sugar and cornflour mix again.
  10. Now take a piece of parchment paper of the size of your dish and gently press over the dusted layer to smoothen.
  11. Allow the marshmallows to set. This might take from 8-10 hours depending on the climatic condition. I personally left it overnight.
  12. Now when set, cut into square pieces , slowly lifting each piece and rolling it into the icing sugar mix. (I used a pizza cutter for cutting them smoothly).
  13. Enjoy your marshmallows.
