ABOUT Carrots and Herbs Vegetable RECIPE

This Carrots & Herbs Vegetable (Gajjar ki Hari Bhari Sabzi) is low in calories and loaded with vitamins and minerals. Whenever I go on a diet plan this recipe tops my diet list. This recipe is from the Sindhi cuisine, but its variations are seen in other Indian cuisines. This vegetable is a typically enjoyed during winter season when herbs are abundantly available. This Carrots & Herbs Vegetable is best enjoyed with bajra, jowar or plain rotis.

Ingredients Serving: 4

  1. Carrots 400 grams diced and soaked in salt water for an hour
  2. Fresh fenugreek leaves(methi leaves) 1 cup
  3. Fresh green garlic 1/4 cup finely chopped
  4. Spring onion 1/4 cup finely chopped
  5. Dry garlic 4 cloves finely chopped
  6. Fresh peas 1/4 cup blanched
  7. Tomato 2 medium size chopped
  8. Green chillies 2 finely chopped
  9. Turmeric 1/2 teaspoon
  10. Coriander powder 1 teaspoon
  11. Salt to taste
  12. red chilli powder 1/4 teaspoon
  13. Garam masala powder 1/4 teaspoon
  14. Oil for cooking 2 tablespoon

Instructions

  1. Heat oil in a pan and, saute dry garlic lightly
  2. Add the chopped fenugreek leaves, and saute for a few seconds
  3. Then add green garlic, spring onion, green chillies, and carrots.
  4. Also add the salt, turmeric powder, coriander powder and red chilli powder Give a nice stir.
  5. Add the peas at this stage.
  6. Cover and cook on medium to low flame.
  7. Once the tomatoes become mushy and carrots are nearly done, add the blanched peas. Sprinkle garam masala powder
  8. Cover and simmer on low flame for ten minutes
  9. Serve hot with bajra roti or plain rotis.
