ABOUT Green Papaya Mint Soup RECIPE

Raw Papaya is healthy as it contains vitamins, enzymes, essential nutrients and minerals. It also gives a boost to our health. On the other hand mint leaves has a cooling effect, promotes digestion and cures flatulence. Hence Combine the two to make a yummy healthy soup. This combination works just great. It is light and refreshing as a one dish meal with or without any salads.

Ingredients Serving: 3

  1. 1/2 of a raw papaya, chopped
  2. 1 tbsp. oats
  3. 1 onion, chopped
  4. 2-3 garlic cloves, chopped
  5. 1" ginger, chopped
  6. handful of mint leaves
  7. 1 tbsp. olive oil
  8. 1 bay leaf
  9. salt to taste
  10. 1/2 tsp. turmeric powder
  11. 1 tsp. garam masala powder
  12. 1 tsp. coriamder-cumin powder
  13. 3-3/12 cups water / stock
  14. 1 tsp. lime juice
  15. coriander leaves and mint leaves to garnish

Instructions

  1. Heat oil and saute the bay leaf, followed by the onion, ginger and garlic. Fry till they turn soft. Now add the chopped papaya, salt, turmeric powder, oats, coriander-cumin powder and the garam masala powder.
  2. Saute for 1 minute or two till everything is well combined. Add the water / stock and the mint leaves and pressure cook for 3-4 whistles. When cool, discard the bay leaf and blend into a puree.
  3. Adjust the water according to the consistency required. Just before serving, heat through and serve, garnished with lime juice, coriander leaves and mint leaves.
