Le Diabolo

Ingredients to make Le Diabolo

  • All purpose flour 15 gm
  • Ground almonds 30 gms
  • Castor sugar 75 gms
  • Eggs 2 (separated)
  • Baking powder 1/4 tsp
  • Cream of tartar 1 small pinch (1/16 tsp)
  • Butter 100 gms (room temperature)
  • Chocolate 100 gms chopped (room temperature)
  • Vanilla essence 1 tsp

How to make Le Diabolo

  1. Melt chocolate and butter together
  2. Beat yolk and 50 gms sugar, till thick.
  3. Add warm chocolate mixture and mix.
  4. Stir in All Purpose Flour, almonds and baking powder.
  5. Beat egg white with cream of tartar. Add sugar and beat till stiff.
  6. Fold the egg white mix in yolk mixture.
  7. Scrape the mixture into prepared tin and bake it for 40 minutes at 190 degree centigrade.
  8. Check with a skewer and cool on a wire rack.
My Tip: No need of icing. Serve with fresh fruits, whipped cream, chocolate sauce or fruit compote. If using unsalted butter, add a pinch of salt.
