Ingredients Serving: 4

  1. 12 mutton paaya(trotters)
  2. 1 medium size onion
  3. 2 tbsp chopped ginger
  4. Whole garam masala as per taste
  5. Salt
  6. Lemon juice
  7. Crushed black pepper
  8. Coriander leaves

Instructions

  1. Wash paaya peices thoroughly.
  2. Chop onion fine along with ginger and coriander.
  3. In a pressure cooker add all the ingredients except the lemon juice and crushed pepper powder. Add enough water to cover all the paaya pieces. Cook it on slow flame for 2 hours.
  4. Open the pressure cooker, and check. Pieces should be so well cooked that they start separating from bone. Add more boiling water if required.
  5. Keep the pieces aside and strain the soup. Add the pieces back. This is a clear soup but if you like it without straining, skip this step.
  6. Boil it once again. Serve it by adding lemon juice, crushed pepper and coriander leaves.
  7. Paaya soup is usually enjoyed with freshly baked soft paav/bun.
