Ingredients to make Passion Cake

  • Butter 80 grams melted
  • Eggs 2
  • Light brown sugar 100 gms
  • All purpose flour 100 gms
  • Carrot peeled and grated 50 gms
  • Apple peeled and grated 25 gms
  • Baking powder 1/2 tsp
  • Baking soda 1/4 tsp
  • Cinnamon powder 1tsp
  • Nutmeg1/8 tsp
  • Clove powder 1/8 tsp
  • Cottage cheese 1 cup (Fresh)
  • Cream 3 tbsp
  • Icing sugar 1/4 cup
  • Pineapple essence 3-4 drops

How to make Passion Cake

  1. Mix flour, baking powder and baking soda. Keep aside.
  2. Mix eggs, melted butter, apple, carrot, spices, sugar in a bowl and blend well.
  3. Add flour in the above mixture and mix well.
  4. Pour in a greased cake tin and bake in preheated oven at 180 degree centigrade for 40 minutes, till the skewer comes out clean.
  5. For the topping, beat the cottage cheese, sugar, pineapple essence and cream together. Spread it in the center of the cake and serve.

My Tip:

Topping with cottage cheese is good sprinkled with nuts tastes good also.
