Lemon and Ginger Tea cake

Ingredients to make Lemon and Ginger Tea cake

  • Eggs 2
  • Butter 100 grams, melted
  • 1 1/4 cup all purpose flour
  • Baking powder 1 tsp
  • Baking soda 1/2 tsp
  • Castor sugar 100 gms
  • Lemon juice 3 tsp
  • Candied lemon peel chopped 2 tbsp
  • Crystallized ginger chopped 3 tbsp

How to make Lemon and Ginger Tea cake

  1. Mix butter, eggs and lemon juice. Beat well.
  2. Mix flour, baking powder, baking soda and sugar.
  3. Mix dry and wet ingredients together.
  4. Dust the lemon peel and ginger. Add in the cake mixture.
  5. Pour the contents in baking dish. Bake in a preheated oven for about 40 minutes at 180 degree centigrade.
My Tip: Serve with whipped cream or fruits or mix lemon juice and icing sugar and drizzle over the cake.
