Lemon and ginger together create magic in a cake.

Ingredients Serving: 4

Eggs 2
Butter 100 grams, melted
1 1/4 cup all purpose flour
Baking powder 1 tsp
Baking soda 1/2 tsp
Castor sugar 100 gms
Lemon juice 3 tsp
Candied lemon peel chopped 2 tbsp
Crystallized ginger chopped 3 tbsp

Instructions

Mix butter, eggs and lemon juice. Beat well.
Mix flour, baking powder, baking soda and sugar.
Mix dry and wet ingredients together.
Dust the lemon peel and ginger. Add in the cake mixture.
Pour the contents in baking dish. Bake in a preheated oven for about 40 minutes at 180 degree centigrade.
