ABOUT White Sauce Pasta RECIPE

White Sauce Pasta is a traditional Italian dish & very popular in India especially amongst the youngsters. This main course meal can be prepared for get-to-gathers, kitty parties, etc. Many videos / text recipes of White Sauce Pasta is widely available on internet nowadays but this is something I make to impress my husband who's pasta lover. One can make using any pasta of their likings, I have used here Penne Pasta. Lets Start..!!

Ingredients Serving: 2

  1. Penne Pasta - 2 cups
  2. Olive Oil - 2 tbps + 1 tsp (Detail use in step)
  3. Butter - 2 tbsp
  4. Milk - 2 cups
  5. All purpose Flour (Maida) - 2 tbsp
  6. Garlic (finely chopped) - 1 tbsp + 1 tsp (Detail use in steps)
  7. Ginger (finely chopped) - 1 tsp
  8. Green chillies (finely chipped) - 1/2 tsp
  9. White's of Green Onion (chopped) - 1/2 cup
  10. Capsicum(chopped) - 1/2 cup
  11. Red Carrot (chopped) - 1/4 cup
  12. Green's of Green Onion (finely chopped) - 1/2 cup + for garnishing
  13. Salt to Taste
  14. Black Pepper Powder - 1/2 + 1/2 tsp
  15. Chilli Flakes - 1/2 + 1/2 tsp
  16. Mixed Herbs - 1/2 + 1/2 tsp
  17. Oregano - 1/2 + 1/2 tsp
  18. Garlic Seasoning - 1/2 + 1/2 tsp
  19. Cheddar Cheese (grated) - 1 cube
  20. Processed Cheese (grated) - 1 cube
  21. Water (for boiling) - 4 to 5 cups

Instructions

  1. INGREDIENTS FOR WHITE SAUCE
  2. INGREDIENTS FOR VEGGIES
  3. TAKE 4-5 CUPS OF WATER IN A PAN. ADD SALT (AS PER TASTE) & OLIVE OIL 1TSP
  4. ADD PENNE PASTA (OR ANY TYPE OF PASTA) & COOK THEM FOR 9-10 MINS.
  5. CHECK THE PASTE WITH THE HELP OF A KNIFE (OR UNTIL AL-DENTE MEANS COOKED BUT NOT VERY SOFT) & DRAIN.
  6. IN A SAUCE PAN, ADD 2 TBSP OF BUTTER & 1 TBSP OF OLIVE OIL.
  7. ADD 1 TBSP OF FINELY CHOPPED GARLIC & SAUTÉ FOR 10-15 SECONDS.
  8. ADD 2 TBSP OF ALL PURPOSE FLOUR (MAIDA) & STIR CONTINUOUSLY FOR 1 MIN.
  9. GRADUALLY POUR 2 CUPS OF MILK & WHISK CONTINUOUSLY WHILE POURING.
  10. STIR & COOK FOR 1-2 MINS.
  11. ADD SALT TO TASTE & 1/2 TSP OF BLACK PEPPER POWDER.
  12. ADD 1/2 TSP OF BOTH CHILLI FLAKES & MIXED HERBS.
  13. ADD 1/2 TSP OF GARLIC SEASONING & 1/2 TSP OREGANO. MIX IT.
  14. ADD 1 CUBE OF GRATED CHEDDAR CHEESE & 1 CUBE OF GRATED PROCESSED CHEESE (FOR CHEESY FLAVOR).
  15. WHEN SAUCE THICKEN & BUBBLY, COAT IT ON BACK OF SPATULA, IF COMES OUT IN ONE STRAIGHT LINE, ITS DONE
  16. HEAT A PAN, ADD 1 TBSP OF OLIVE OIL.
  17. ADD FINELY CHOPPED - 1 TSP OF GARLIC, 1 TSP OF GINGER & 1/2 TSP OF GREEN CHILLIES & STIR.
  18. ADD IN 1/2 CUP OF WHITE'S OF GREEN ONIONS & 1/2 CUP OF CAPSICUM & STIR FOR 10 SECONDS.
  19. ADD 1/4 CUP OF RED CARROT & 1/2 CUP OF GREEN'S OF GREEN ONIONS & STIR AGAIN.
  20. SEASON WITH SALT TO TASTE & 1/2 TSP OF BLACK PEPPER POWDER.
  21. ADD 1/2 TSP OF CHILLI FLAKES & 1/2 TSP OF MIXED HERBS.
  22. NOW ADD 1/2 TSP OF OREGANO & 1/2 TSP OF GARLIC SEASONING & MIX IT. LET IT COOK FOR 10-15 SECONDS.
  23. ADD 6-7 TBSP OF PREPARED WHITE SAUCE & MIX THEM.
  24. FINALLY, ADD BOILED PASTA & TOSS THEM LIGHTLY. (ADD SOME MORE WHITE SAUCE IF IT LOOKS DRY).
  25. PASTA IS READY. GARNISH IT WITH SOME GRATED CHEESE & FINELY CHOPPED GREEN'S OF GREEN ONIONS.
