ABOUT Quinoa Egg Stir Fry (Fried rice recipe) RECIPE

Fried rice is our best take away recipes from the Chinese cuisine gallery. It’s also open to a lot of variations, so we make it at home very easily and the way we want to. So here’s a healthy version of our favourite comfort food, minus the rice!

Ingredients Serving: 2

  1. Mixed quinoa seeds 100 gms
  2. Mixed vegetables finely chopped 200 gms(French beans,cabbage,onions,green peas,carrot)
  3. Handful of sweet corn
  4. 2 Tb olive oil for cooking
  5. 3-4 garlic pearls chopped finely
  6. 1 ts oil for boiling quinoa
  7. Salt to taste
  8. 1 Tb soy sauce
  9. 1 Tb ground black pepper powder
  10. 2 Eggs
  11. Water as needed

Instructions

  1. Rise quinoa in a fine colander well and bring 2 cups of water to boil in a sauce pan
  2. Add the quinoa in the boiling water along with 1 ts oil and a pinch of salt and let to boil
  3. Once boiled for 2 minutes, reduce heat and cook covered for 10-12 minutes till the water is completely absorbed by the quinoa
  4. In another saucepan boil veggies like sweet corn and green peas using a cup of water for 5-7 minutes and strain the water and keep aside
  5. Once the quinoa is cooked, take off heat keep aside
  6. Heat a Tb of oil in a non stick pan
  7. Add onions, chopped garlic and sauté for 2 minutes on medium heat
  8. Add the other veggies like beans, cabbage, carrots, boiled sweet corn and peas and sauté for 5-7 minutes more
  9. Reduce heat and add the quinoa and mix well
  10. Add salt to taste, pepper powder and soy sauce and mix well
  11. Move the quinoa to one side of the pan and add an eggs and scramble it well on the other side
  12. Once scrambled,mix it well with the quinoa and take off heat
  13. Serve hot with hot garlic sauce
