Ingredients to make Skordalia

  • 1/2 kg potatoes peeled
  • 3-4 garlic cloves crushed
  • 1/2 cup of olive oil
  • 2 tbsp white vinegar
  • 1 tsp lemon juice
  • 1 egg yolk
  • olive oil black pepper salt to season
  • coriander leaf for garnish

How to make Skordalia

  1. Boil the potatoes in salted water until they are tender.
  2. Mash the boiled potatoes and mix with garlic until its smooth.
  3. Using a fork whisk egg yolk, oil, vinegar,lemon juice. Gradually add potato mixture. Transfer the mixture to air-tight containers. Cover and refrigerate overnight.
  4. While serving, sprinkle salt pepper and drizzle with olive oil. Garnish with coriander leaf.
